From our Cellar: Good things come to those who wait

Making wine is a slow process, and as time goes by, our wines at Babylonstoren are slowly but surely starting to develop into something that one day, our customers will be clamouring after. Right now, we’re at the point of racking the wines from their fermentation lees before the aging process in the barrels begins. Here are assistant winemakers, Wian and Alta, hard at work, getting it all done.

And best of all? Once they’ve done all that, my job is to make sure it tastes OK!
