Our Garden Spa, tucked away behind the Greenhouse, echoes the seasonal rhythm of the garden. During the winter slumber, our gardeners are as busy as ever, pruning and planting, preparing for the garden’s re-awakening in summer.

Every winter our master baker and chef Karen Pretorius flies abroad to work alongside fellow artisan producers. This year she left little Trompie and the chicken brood heartbroken to spend time with animals of a different feather.

The food we serve in Babel and The Greenhouse come from the garden and the menus are inspired by the fresh produce currently in season. With two restaurants it’s no surprise that we have quite a bit of fruit and veggie offcuts - this is great for making nutritious compost!

From June through to August, the crisp cold brings with it sweet root vegetables, pulled fresh from the soil; warmed wine; the vibrant orange of pumpkins and citrus; and the rich green of winter leaves.
